Bite-Size Spinach and Cheese Quiches

These spinach packed miniature quiches are a perfect addition to any brunch spread.

How to make it
  1. Preheat oven to 375ºF (190ºC). Lay Scoops! on foil or parchment paper–lined baking sheet.
  2. Chop spinach and squeeze out excess moisture. Whisk together eggs, 3 tbsp (45 mL) water, Salsa Con Queso and spinach.
  3. Scoop spoonfuls into Scoops! Bake for 10 to 12 minutes or until eggs are set. Serve with additional Salsa Con Queso if desired.

Tip: If you like, top with sliced green onions or cherry tomatoes.
