Green Goddess Kale Salad Nachos
- 2 cups (500 mL) shredded kale
- 2 tbsp (30 mL) prepared Italian vinaigrette
- 1 bag (275 g) Tostitos® Multigrain Home‑style Salsa Tortilla Chips
- 1 cup (250 mL) prepared guacamole
- 1/2 cup (125 mL) crumbled feta cheese
- 2 green onions, thinly sliced
How to make it
- Toss kale with vinaigrette. Let stand for 5 minutes.
- Arrange half of the chips on serving platter; top with half of the kale, guacamole and feta. Repeat layers. Sprinkle with green onions. Serve immediately.
Toss kale with a simple oil and vinegar or lemon‑herb vinaigrette, or simply apple cider, if desired.
Add canned chickpeas (drained, then rinsed) for a vegetarian‑friendly source of protein.
