Huevos Rancheros Tapas
- 3 tbsp refried beans
- 2 large eggs
- 1/4 cup grated queso fresco cheese
- 1 tbsp chopped fresh cilantro
- 3 tbsp sour cream
- 1/4 small ripe avocado, sliced
- 14 Tostitos® Scoops!® tortilla chips
- 3 tbsp Tostitos® Salsa
How to make it
- Preheat oven to 350°F.
- Place Tostitos® Scoops!® tortilla chips on a cookie sheet, filling each with refried beans and leaving a small indentation in each centre.
- In a small bowl, combine eggs and cheese and spoon evenly into scoops.
- Bake until cooked, about 5 minutes.
- Remove from oven, then top each with salsa, cilantro, a dollop of sour cream and a slice of avocado.
- Place on a plate with slices of fresh lime and serve immediately.
