Mediterranean Chicken Nachos

Give your nachos a Mediterranean twist by adding roasted red peppers, olives, and basil. So simple‑ yet so delicious!

  • 1 bag (220 g) Tostitos Cantina® Extra Thick Tortilla Chips
  • 2 cups (500 mL) shredded cooked chicken
  • 1 cup (250 mL) roasted red peppers, finely chopped
  • 1/2 cup (125 mL) sliced black olives
  • 1 cup (250 mL) shredded mozzarella cheese
  • 1/4 cup (60 mL) grated Parmesan cheese
  • 2 tbsp (30 mL) thinly sliced fresh basil leaves
How to make it
  1. Preheat oven to 350°F (180°C). Spread tortilla chips on foil‑lined baking sheet.
  2. Top with chicken, red peppers and olives; sprinkle mozzarella and Parmesan cheese over top. Bake for 10 to 12 minutes or until cheese melts. Top with basil.

• Serve with your favourite Tostitos® Salsa.
• Use jarred drained roasted red peppers (patted dry with paper towel), or roast your own fresh sweet red peppers.
