Summer Garden Scoops!*

Ingredients
  • 60 mL (¼ cup) finely diced red onion
  • 125 mL (½ cup) finely diced red pepper
  • 125 mL (½ cup) finely diced seeded English cucumber
  • 60 mL (¼ cup) crumbled feta cheese
  • 10 mL (2 tsp.) olive oil
  • 7.5 mL (1 ½ tsp.) red wine vinegar
  • 2.5 mL (½ tsp.) fresh basil
  • 1 mL (¼ tsp.) freshly ground pepper
  • 1 mL (¼ tsp.) salt
  • ½ bag Tostitos® Scoops!® Tortilla Chips (approx. 30)
  • Optional:
  • 10 pitted Kalamata olives, quartered
How to make it
  1. In a medium bowl combine red onion, red pepper, cucumber and feta cheese.
  2. Add olive oil, vinegar, basil, pepper and salt. Toss to combine.
  3. Place 7.5 mL (1 ½ tsp.) of mixture on each Tostitos* Scoops!* tortilla chip. Top with olive slices, dividing evenly, if using.

Tip: To keep Tostitos* Scoops!* tortilla chips crisp, top with salad mixture when ready to serve.
